Raspberry-Lemon Gelatin Gummies

Instructions

  • Combine raspberries, lemon juice and coconut water in a blender and blend until smooth.
  • Pour mixture into a 2-cup measuring cup and stir in a few drops of stevia.
  • Pour 1 1/2 cups of sweetened mixture into a saucepan over medium-high heat, reserving the remaining mixture. Heat mixture until hot, but not boiling.
  • Add gelatin powder to the reserved mixture and allow to sit for 1 minute. Pour the heated mixture back into the measuring cup and stir until the gelatin fully dissolves.
  • Pour the mixture into ice cube trays or a small baking dish and refrigerate for at least 1 hour, or until firm. Enjoy!

Notes

If you used the baking dish to refrigerate gummies, cut into bite-sized squares before eating.
