Roasted Cauliflower Chimichurri Recipe
Quick and easy, this insanely delicious side dish of roasted cauliflower chimichurri is vegan, paleo and Whole30 compliant and bursting with flavor.

Preheat oven to 425F. Toss cauliflower with olive oil and roast for 15 minutes on a baking sheet. Toss cauliflower around on the baking sheet and roast for an addition 5-10 minutes, or until crisp and caramelized.
Toss cauliflower with chimichurri sauce and serve.
