I happily skip dessert 99 percent of the time and chocolate is one of the only foods I don’t really like. {pauses for gasps}

So no surprise that pancakes, waffles and sugary cereal appear on my breakfast menu about as often as IHOP cleans their syrup dispensers (why are those things always so damn sticky?!).

It’s not that I dislike these foods (I’m not a monster!), it’s just that I much prefer savory breakfasts, like bacon and eggs or avocado toast or even soup.

But I get bored easily and hate eating the same thing day after day. Couple my aversion to monotony with traveling (read: limited options available) and reluctance to eating bread at every meal and you get the story for how I came up with one of my new favorite breakfasts: savory oatmeal breakfast bowls.

We were down in Orlando, visiting my grandparents at their timeshare. And all they had in their fridge was white bread (not a great option for an anti-inflammatory diet), eggs (great, but if I’m not scrambling, what can I put them on?) and salad fixings (I’m all about eating healthy, but a salad for breakfast is just going too far!).

After a few days of eating omelets, I needed a change. So when I discovered some oatmeal in the pantry, a lightbulb went off.

I sauteed up some veggies–this is another classic R+R recipe where there’s not a strict ingredient list you need to follow; rather just throw what you’ve got on hand or your favorite veggies in the pan–poached an egg and threw it all on top of some oatmeal with a garlic pepper spice blend.

Looks of horror crossed my family’s face when I put the savory oatmeal in front of them, but one bite in and everyone quickly changed their tune and acknowledged me for the true genius that I am…clearly.

Because in my world being a genius isn’t about curing disease or solving quantum physics problems and other complicated math equations. No, it’s about creating delicious food combinations. Still waiting for my Nobel Prize…

Just trust me that savory oatmeal WORKS! Plus, it’s naturally gluten-free, dairy-free and vegetarian. AND if that weren’t enough, it’s extremely high in fiber, good-for-you omega-3 fats and protein. Savory oatmeal gives new meaning to the phrase breakfast of champions.

Like I said, this recipe is totally adaptable to whatever veggies you want to use. I recommend onions, peppers and mushrooms as a great base, but you can also throw in broccoli or zucchini or whatever your heart desires.

I love adding some leafy greens, like spinach or arugula, too. And of course, avocado. Because what isn’t made better with the addition of avocado?

Likewise, the egg doesn’t have to poached. A fried egg or over-easy egg works great here–it’s really just the runny yolk that’s key. Please, please, please, don’t overcook your eggs and miss out on the holiness that is runny egg yolk.

**KITCHEN HACK ALERT**: If you’re poaching your eggs, pour a little white vinegar into the simmering water before you crack the eggs. It helps keep the whites from separating and results in a perfectly poached egg every. single. time.

As far as the spice blend goes, I like using a combo of red pepper flakes, garlic, salt and pepper, but again, any spice blend would work.

You could make this bowl a little South of the Border by adding some chile powder and cumin, or go Italian by garnishing with a little thyme and parmesan cheese. Some fresh herbs scattered on top wouldn’t hurt either–chives or cilantro would be amazing here.

I chose to make these savory oatmeal bowls vegetarian, but you could also add some crumbled bacon to the mix to really push the flavor over the top. Yeah, you’re going to want to do that. It’s not really breakfast without bacon, is it?

Ingredients
Instructions
  1. Cook oatmeal according to package instructions. Or you can split the dried oats into two bowls, add half of the water to each and microwave for 30-second intervals (stirring in between) until oats are cooked. It usually takes about 3-4 sessions, or 2 minutes.
  2. Meanwhile, in a medium pan, add olive oil over medium-high heat. Add diced veggies and saute until soft, amount 5 minutes. Add spinach and saute until wilted. Add garlic and cook until aromatic, about 1 minute.
  3. While the veggies are cooking, cook your eggs. I recommend poaching for 2 minutes in simmering water with 1 tablespoon white vinegar. Or you can fry the eggs. Cook them however you prefer them, though I recommend leaving the yolks runny.

  4. Split the sauteed veggies over the two cooked oatmeal bowls. Top each bowl with 2 eggs. Add avocado slices and cherry tomatoes. Season with salt, pepper and red pepper flakes. Enjoy!
