Ooooooh baby! Happy Fall, y'all!
It's officially Fall in Atlanta now–the weather this week has been ridiculously perfect and it has sent my mood soaring into the happiest place.
Which is such a welcome and MUCH NEEDED change from how I felt last week (i.e. like a raging lunatic who was irrationally irritable about absolutely everything and nothing at all).
Do you guys have weeks like that? Where every little thing that goes wrong just sends you into a rage blackout?
Where something as simple as someone cutting you off in traffic causes you to behave like a deranged inmate at an insane asylum? Just me?
I like to think that normally I'm a pretty relaxed, even-keeled person, but last week, man… I don't know what happened. A flip in me switched and I was just not myself.
So thank the holy heavens that this week, with the new crisp weather and delicious Fall flavors abounding everywhere I turned, I regained my sanity and actually felt, dare I say it… happy.
This apple pie smoothie definitely helped. Not going to lie, it's like a delicious warm and yet refreshing (that's what you get when you combine cinnamon and ice) hug that makes me want to skip down the Beltline shouting to everyone I pass about how I can't believe something that tastes just like the classic dessert could actually be this healthy!

But seriously, this apple pie smoothie is AMAZING, especially post-workout.
Of course, it's insanely delicious, but it's also VEGAN. GLUTEN-FREE. FULL OF PROTEIN AND FIBER, AND….
OK, I'll stop yelling. It's just really good! And it's such an awesome way to welcome Fall and jump on the seasonal bandwagon. Speaking of bandwagons…
So how is it Vegan AND full of protein?
I've talked before about how much I love this clean protein powder–compared to most brands on the market, which aren't often organic and are filled with artificial additives, tons of sugar and GMOs, Perfect Fit is a dream.
The only ingredients are vegan, plant-based protein from pumpkin seeds and peas, plus organic vanilla, monkfruit extract, sea salt and guar gum.
Plus it’s certified organic, non-GMO, gluten-free and freaking delicious!
And I love the way the vanilla flavor compliments the warming spices in this apple pie smoothie–we used cinnamon, nutmeg and cloves, but if you have a clean spice blend that you like (I recommend Primal Palate or Frontier Co-Op Organic), you could use that, too.
That's the beauty of most smoothie recipes–they're so adaptable.
Truly, what I'm giving you here is just a base recipe that can be tweaked to your personal preferences.
The general principle behind this recipe is just apples + greens + spices + oats + protein + liquid + ice.
Follow those basic guidelines and you'll be set. Though if I can caution you for a minute on the liquid part…
I really recommend avoiding dairy in this recipe, even if you're not vegan or lactose-intolerant, as it's just not necessary, so why take the risk?
Instead of risking added hormones, antibiotics, digestion distress, acne and/or any of the other common side effects of consuming dairy, simply swap in coconut milk or almond milk and I promise you won't be missing any flavor or creaminess.
In fact, I think coconut milk is such an awesome addition to this apple pie smoothie because it makes it ultra-creamy!
I suggest using Native Forest Simple, as there are no added sweeteners, gums/thickeners, or other additives of any kind. It's just organic coconut and purified water.

Vegan Apple Pie Green Protein Smoothie
- 1 granny smith apple, diced
- 1 cup organic spinach
- 1/4 cup gluten-free oats (I recommend Bob's Red Mill)
- 1 scoop vanilla protein powder
- 1 tablespoon organic ground cinnamon
- 2 organic cloves
- 1 teaspoon organic nutmeg
- 1/2 cup organic, unsweetened coconut milk
- 1 cup filtered water
- 1 cup ice
- Optional: if you want the smoothie to be sweeter, add 1-2 dates
- Combine all ingredients into a large, high-powered blender (I recommend Vitamix) and blend until smooth and creamy.
- Serve and enjoy!
