Just like its cousin, Chimichurri, the beauty of this green sauce lies not only in its flavor (think bold, spicy, tangy, fresh, vibrant, delicious!), but also in its body-nourishing superpowers.

Made from tomatillos (Vitamin-C-rich nightshades–they look like green tomatoes–chockfull of cancer-fighting antioxidants and digestion-friendly fiber) and cilantro (a super fresh, calcium-rich herb with anti-inflammatory properties known to lower cholesterol and blood pressure, stabilize blood sugar and stimulate digestion), salsa verde is the perfect way to add complexity and depth to your plate, without fat, sugar, dairy and sodium.

Like I said, it's magical! {Is it just me or does an evil laugh fit perfectly here?!}

And it's got to be one of the lowest calorie sauces in existence. Jackpot!

The rest of this amazing green sauce is made up of some of my favorite spices and seasonings–garlic, jalapeno, onion, cumin, coriander, chile pepper, red pepper flakes and lime juice. Man, it's so fresh!

There's tons of brands out there that I'm sure do a great job, but I can't recommend the Cuisinart food processor more. It's the gold standard of food processors, and despite using mine weekly for a decade, I'm still always amazed at what it can do. I love using mine to shred potatoes for hashbrowns, to grate a block of cheese in a hurry, and, of course, to make magical green sauces, like salsa verde.

I love making a chicken or turkey soup-slash-chili with it (recipe coming soon!), enchiladas and tacos are always made better with a spoonful of it (as are grilled meats, particularly pork, poultry and fish, and vegetables, including a simple baked potato), and even scrambled eggs get a nutrient-rich flavor boost with a little salsa verde.

Just a spoonful is all it takes to bring insane flavor to literally whatever you're making. No judgment to those who choose to just gulp their salsa verde straight from the bowl. I may or may not know what that's like… who's to say, really?

Servings: 16 oz

Ingredients

Instructions

  • Add all ingredients to a food processor (I recommend this one) and pulse until smooth and combined.
  • Reserve in mason jars for a future use, or serve immediately with tortilla chips.

Notes

If the salsa is too thick, add 2 tablespoons water at a time and pulse until you reach your desired consistency. It should be slightly chunky, and slightly watery. But not soup-like. Think restaurant-style salsa texture and you're golden!
