Happy Monday, friends! I’m fresh off a week spent up in the mountains and I’ve never felt better.

Being in nature, feeling the sun on my skin, and just slowing down always seems to do the trick, doesn’t it?!

Of course, eating a healthy, nutrient-dense diet also always makes me feel my best. Which is why I was so excited to team up with the U.S. Highbush Blueberry Council to develop four incredibly good and good for you blueberry recipes. But first…

Freezing Blueberries: Why You Should Eat Frozen Blueberries

If you guys have been following Root + Revel for a while, you know that I always stock up on frozen fruit for my superfood smoothies. But I almost always get asked why I use frozen vs. fresh.

Here’s the deal: Buying dozens of fresh fruits every week is a recipe for waste in my kitchen. Not only are some of my favorite fruits not in season year-round, but it can be difficult to get through a pound of fresh fruit before it goes bad.

And it’s expensive! Did you know frozen fruit is often cheaper than fresh?

Plus, frozen fruit adds an icy cold quality to smoothies without watering them down with ice cubes. Though frozen blueberries are great for more than just smoothies–they’re the ultimate kitchen multi-taskers.

Available anytime, frozen blueberries add a burst of nutrition, color and sweetness to every dish, and they pair with both sweet or savory, chilled or warm dishes. Keep scrolling for four of my favorite blueberry recipes!

Best of all, even though the domestic blueberry season runs from April to late September, thanks to frozen blueberries you can enjoy the fruit year round.

And frozen blueberries retain their freshness, so embrace your freezer!

Blueberry Nutrition: The Health Benefits of Blueberries

Contrary to popular belief, frozen blueberries (and all frozen fruit) are picked at the peak of ripeness and frozen immediately (often on the farm) for maximum flavor.

I always go for organic fruits to minimize toxins and pesticides, but you can do whatever is best for your wallet and lifestyle.

Whatever you choose, your body will thank you. With just 80 calories per cup and virtually no fat, blueberries are chockfull of nutritional benefits, namely Vitamins C and K and manganese, that help combat aging and boost focus, memory and immunity.

Don’t ever be concerned about the carb content of fruits and vegetables–these are the good carbs that your body needs!–but if you are counting, rest easy knowing that 1 cup of blueberries contains just 21 grams of carbs, and 15 grams of sugar.

Bluberries also contain nearly 4 grams of fiber per cup, which helps with digestion, cholesterol and heart health. Not to mention fiber adds bulk to your diet, which may help you feel full faster.
